How can I get the user to submit the payment to paypal and then get redirected back to the full registration?

Redirect to registration afer payment
As you have the Pro version, I suggest you use Pro forms instead of buttons. Then everything is done in one go, and there is no need for any redirect.
In fact, I’d also suggest you use Stripe instead of PayPal if Stripe is available where you are. You will find it much easier and more consistent.

We managed to get paypal to work, but the information sent automatically in email is showing missing info, even when someone adds it. See here… address and country are missing.

You have now gone beyond my knowledge of PayPal! I used it briefly several years ago and hated it. So I moved to Stripe. Honestly, it’s much better, and I think everyone who has tried them both would say the same.
Okay, well how do I write S2memberPro support?
