Is there a straight-forward way to allow each individual member to determine which items of their info are to be included and which items are to not be included in their member directory listing?

There isn’t a feature for that built-in, but it is possible to do it with some customization. I just did it for a client’s website last week, so it’s possible. I used a combination of custom profile fields and a custom template.
By “custom template” I presume you’re referring to a custom “page template” where the custom profile fields are embeded for the members to fill out the info that they want included in their member directory listing. Right?
