Hello,
I have recently changed my domain name and as I update the domain throughout the site and in the database my custom fields and custom field data no longer appear in Wordpress. How can I fix this or is there a better way to accomplish this?

Those would be in the database. Did you migrate the database when you changed? or is it the same database, just changed address?
If the fields are in the db, they should show up, they’re not dependent on the domain name.
Do you not see them at all even in your configuration? Wp Admin > s2Member > General Options > Registration/Profile Fields & Options
