I did have a read through the forums, and a few searches but couldn’t see an answer to my question. I’ll try to explain it as clear as I can.
I would like to provide a 3 month free trial, once this 3 months ends the customer is automatically charged. I wish to use Stripe, however I might decide to use PayPal - can this be achieved using both the free version of paypal and pro aswell as stripe and if so how would I achieve this?

Yes it can 
I only use PayPal but I’m sure it’s the same in process for Stripe.
If you do not wish members to go through the payment gateway on sign-up just use a Free registration Pro-form;
s2Member -> PayPal Pro-Forms
This will automatically downgrade to a Free Membership (Level 0). I assume Trial Members receive an email that tells them to make a payment to continue with the premium level.
In the button code you would (in your case) change it for:
…, tp=“3”, tt=“M”
Or if you desire that an automatic payment is made then use the options to generate your Button code under;
s2Member -> PayPal Buttons;
Set the “I’ll offer the first” to 3 Months $0.00
